FRESH PAKU (FERN) FILIPINO SALAD

INGREDIENTS

Fresh fern (Pucuk Paku)

Fresh tomatoes

Onion

Red chilies

Salted eggs

Lemon/calamansi/vinegar

sugar

salt

METHOD

Cut and clean fresh fern thorougly. Blanch fresh fern by putting it in hot boilling water for few second, then quickly lift it into cold water (water plus ice cubes) to make sure it becomes crunchy. Chopped fresh tomatoes and red chillies, add to the fern. Squeze in lemon juice, and add sugar and salt to taste. Mix well. Lastly, add slices of hard boilled salted eggs. Serve this refreshing salad immediately.
